Ingredients

  • 2 bell peppers, sliced
  • 1 onion, sliced

  • 2 tsp chili powder
  • 2 tsp smoked paprika
  • 2 tbsp lime juice

  • Tortillas, to serve

Instructions

  1. Slice the bell peppers and onion into thin strips for even cooking.
  2. Layer sliced onions in the crockpot, followed by bell peppers.
  3. Season chicken breasts with cumin, chili powder, smoked paprika, salt, and pepper.
  4. Place the seasoned chicken on top of the veggies in the crockpot.
  5. Drizzle lime juice over the chicken.
  6. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  7. Check internal temperature; shred chicken if desired.
  8. Serve with warm tortillas and enjoy!
