  • 2 lbs boneless, skinless chicken breasts
  • 1 (6 oz) box chicken stuffing mix
  • 1 bag frozen mixed vegetables (12–16 oz)
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 1/2 tsp Kinder’s Buttery Garlic & Herb seasoning
  • 2 cups chicken broth, divided
  • 1/2 tsp black pepper

Instructions

  1. Place the chicken breasts in the bottom of the crockpot in a single layer.
  2. Combine the cream of chicken soup, sour cream, chicken broth (1 cup), and seasoning in a mixing bowl; whisk until smooth.
  3. Pour the mixture over the chicken, ensuring they are covered.
  4. Add the frozen mixed vegetables on top.
  5. Sprinkle the chicken stuffing mix evenly over the vegetables.
  6. Pour the remaining chicken broth (1 cup) slowly over the stuffing mix.
  7. Cover and cook on low for 6-8 hours or on high for 4 hours.
  8. Sprinkle cheddar cheese on top about 30 minutes before serving and let it melt.
  9. Serve and enjoy with a mix of chicken, veggies, and stuffing.

Notes

For more even cooking, slice thick chicken breasts in half. If stuffing seems dry, add a little cooker liquid.
