Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14 oz) diced tomatoes (with juice)
  • 1 packet taco seasoning
  • 8 oz cream cheese
  • 1 cup chicken broth

Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Layer the drained black beans, kidney beans, and corn over the chicken.
  3. Pour the diced tomatoes, with their juices, over the beans and chicken.
  4. Sprinkle the taco seasoning evenly across the top.
  5. Gently mix to combine the flavors without shredding the chicken.
  6. Add cream cheese in the center and pour chicken broth around it.
  7. Cover and set the slow cooker to cook on low for 6-8 hours or high for 3-4 hours.
  8. Once done, shred the chicken in the pot and stir to incorporate.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. Freezes well.
