Ingredients

  • 1 pound ground beef
  • 2 cups tortilla chips
  • 1 pack taco seasoning
  • 1 can black beans (drained and rinsed)
  • 2 cups shredded cheese (cheddar and Monterey Jack)
  • 1 cup sour cream
  • 1 cup chopped bell peppers
  • 1 cup chopped onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes. Drain excess grease.
  3. Stir in taco seasoning and half a cup of water. Simmer for about 3-4 minutes.
  4. In a large mixing bowl, combine cooked beef, black beans, bell peppers, and onions.
  5. In a baking dish, layer tortilla chips, half of the beef mixture, a layer of cheese, and a dollop of sour cream. Repeat layers, ending with cheese on top.
  6. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
  7. Let the casserole rest for about 5 minutes before serving.

Notes

Feel free to customize with your choice of proteins or veggies. Can be made in advance and stored in the fridge before baking.
