  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup water
  • 1 cup creamy peanut butter
  • 4 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tray with liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt until well combined.
  3. In another bowl, mix oil, vanilla extract, and water, then pour into the dry ingredients. Stir until just combined; do not overmix.
  4. Fill cupcake liners about 2/3 full with batter and bake for 18–20 minutes or until a toothpick comes out clean.
  5. Let cupcakes cool in the tray for about 5 minutes before transferring them to a wire rack to cool completely.
  6. In the meantime, prepare the frosting by mixing creamy peanut butter and powdered sugar in a bowl until smooth and fluffy.
  7. Frost the cooled cupcakes generously with the peanut butter frosting and enjoy!

Notes

For a lighter version, substitute half the vegetable oil with applesauce.
