Ingredients

  • 2 cups Medjool dates, pitted and chopped
  • 1 cup mixed nuts (walnuts, almonds, or your favorites)
  • 1 cup rolled oats
  • 1/2 cup nut butter (almond or peanut butter)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • Optional add-ins: coconut flakes, chocolate chips, or dried fruits

Instructions

  1. Grease the crockpot with non-stick spray.
  2. In a large bowl, combine the chopped dates, mixed nuts, rolled oats, nut butter, vanilla extract, and salt. Stir until fully combined.
  3. Pour the mixture into the greased crockpot and press it down firmly.
  4. Cover and cook on low for 1.5 to 2 hours, or until set.
  5. Let cool for about 15 minutes before slicing into bars.
  6. Store bars in an airtight container or refrigerate for later enjoyment.

Notes

These bars can be frozen for up to two months. Use parchment paper for easy removal from the crockpot.
