Ingredients

  • 2 cups Medjool dates, pitted
  • 1 cup nut butter (peanut or almond)
  • 1 cup nuts, roughly chopped (like almonds, peanuts, or cashews)
  • 1 cup dark chocolate chips
  • Sea salt (to sprinkle on top)

Instructions

  1. In a food processor, combine the pitted Medjool dates with nut butter until smooth, mixing well.
  2. Fold the chopped nuts into the date and nut butter mixture until evenly distributed.
  3. Line a baking dish with parchment paper. Transfer the mixture to the dish and press down firmly to create an even layer, about 1 inch thick.
  4. Cover the dish with a lid or foil and place it in the slow cooker. Cook on low for 120 minutes or until the mixture is heated through and slightly soft.
  5. Let it cool completely in the fridge for about 60 minutes to firm up before cutting into bars.
  6. Melt the dark chocolate chips in a microwave-safe bowl, stirring at 30-second intervals until smooth. Dip each bar in melted chocolate until fully coated and place back onto parchment.
  7. Sprinkle a little sea salt on top and allow chocolate to set in the fridge before enjoying.

Notes

For a nut-free version, use sun butter. Store in an airtight container in the fridge for up to two weeks.
