Ingredients

  • 1 pound of ribeye steak, thinly sliced
  • 1 cup of shredded provolone cheese
  • 1 medium onion, sliced
  • 1 bell pepper (red or green), sliced
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Prepare the Steak: Thinly slice the ribeye steak against the grain to about ¼ inch thick.
  2. Sauté the Veggies: In a skillet, heat olive oil over medium heat and sauté onions and bell peppers for 5-7 minutes until tender.
  3. Cook the Steak: Increase heat to medium-high and add the steak, seasoning with salt and pepper. Cook until just done, about 5 minutes.
  4. Assemble the Roll Ups: Preheat oven to 375°F (190°C). Lay steak and veggies onto slices of cheese and roll tightly, placing seam-side down in a baking dish.
