  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups apples, peeled and diced
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • ½ cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the graham cracker crumbs, melted butter, and granulated sugar in a medium bowl. Press firmly into the bottom of a greased 8×8-inch baking pan.
  3. Bake the crust for about 10 minutes until lightly golden.
  4. Beat the softened cream cheese and sugar until smooth. Add the eggs one at a time, mixing until just combined, then add the vanilla.
  5. Pour the cheesecake filling over the cooled crust and bake for 30-35 minutes until the center is set.
  6. Mix diced apples, brown sugar, and cinnamon in a separate bowl. Spoon over the cheesecake after it has cooled for 10 minutes, then return to the oven for an additional 15-20 minutes.
