  • 1 box Vanilla Cake Mix
  • 3 large Eggs
  • 1 cup Sour Cream
  • 1/2 cup Vegetable Oil
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Brown Sugar
  • 2 teaspoons Ground Cinnamon
  • 2 cups Strawberries (diced)
  • 2 cups Powdered Sugar
  • 1/4 cup Milk
  • 1/2 cup Strawberry Puree

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large mixing bowl, combine the vanilla cake mix, eggs, sour cream, vegetable oil, and vanilla extract. Mix until smooth.
  3. In a separate bowl, mix together the brown sugar and ground cinnamon.
  4. Pour half of the cake batter into the prepared baking pan and spread it evenly.
  5. Sprinkle the brown sugar and cinnamon mixture over the batter, then add a layer of diced strawberries.
  6. Pour the remaining cake batter over the strawberries and smooth it out.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. While the cake is baking, prepare the icing by whisking together the powdered sugar, milk, and strawberry puree until smooth.
  9. Allow the cake to cool for 10 minutes before transferring it to a wire rack to cool completely.
  10. Drizzle the creamy icing over the cooled cake and serve.

Notes

For an extra touch, fold additional diced strawberries into the batter before baking. Store leftovers in an airtight container for up to 4 days.
