Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 tablespoons Jell-O powder (any flavor)
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat the oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. Combine the flour, baking soda, and baking powder in a medium bowl. Set aside.
  3. Cream together the softened butter and granulated sugar until smooth in a large bowl.
  4. Beat in the egg and vanilla extract until fluffy. Scrape down the bowl.
  5. Gradually blend in the dry ingredients until just combined.
  6. Stir in the Jell-O powder until the dough is evenly colored.
  7. Roll the dough into 1-inch balls, then coat in powdered sugar.
  8. Place the cookies 2 inches apart on the prepared baking sheets.
  9. Bake for 8 to 10 minutes until edges are set but centers are soft.
  10. Cool on the baking sheet for 2 minutes before transferring to wire racks.

Notes

Use room temperature butter for best results. Chill the dough if too soft to hold shape while baking.
