Ingredients

  • 34 medium apples (Granny Smith or Honeycrisp)
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup unsalted butter (melted)
  • 2 eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Peel, core, and slice the apples; toss with half the cinnamon and a tablespoon of sugar.
  3. In a large mixing bowl, combine flour, remaining sugar, brown sugar, baking powder, salt, and remaining cinnamon.
  4. Pour in the melted butter and add the eggs; mix until smooth.
  5. Fold in the apples until evenly mixed.
  6. Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
  7. Cool the cake in the pan for 10 minutes before transferring to a wire rack. Serve warm or at room temperature.
