Ingredients

  • Beef Tenderloin (2-3 lbs)
  • Olive Oil (2 tablespoons)
  • Garlic (4 cloves, minced)
  • Fresh Rosemary (2 tablespoons, chopped)
  • Salt and Pepper

Instructions

  1. Preheat your oven to 425°F (220°C) or air fryer to 400°F (200°C).
  2. Take the beef tenderloin out of the refrigerator about 30 minutes before cooking.
  3. Rub the beef all over with olive oil, minced garlic, salt, and pepper.
  4. In a hot skillet over medium-high heat, sear the beef on all sides for about 2-3 minutes per side.
  5. Transfer the seared beef to a roasting pan and roast in the preheated oven for about 25-30 minutes, until it reaches an internal temperature of 135°F (57°C) for medium-rare.
  6. Let the beef rest on a cutting board for at least 10-15 minutes.
  7. Slice the tenderloin into even pieces and serve warm, garnished with freshly chopped rosemary.

Notes

For best results, use a meat thermometer to avoid overcooking. This dish pairs well with creamy mashed potatoes or roasted seasonal vegetables.
