Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup mayonnaise (or Greek yogurt)
  • 1 tablespoon Dijon mustard
  • 1/4 cup celery, diced
  • 1/4 cup red grapes, halved
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • Optional: chopped pecans or walnuts

Instructions

  1. If using raw chicken, place it in the slow cooker with salt and pepper. Cook on low for 6-8 hours or high for 3-4 hours until fully cooked. Alternatively, cook chicken in an air fryer at 375°F for 25-30 minutes.
  2. Once cooked, shred the chicken into bite-sized pieces using two forks or chop into cubes.
  3. In a large bowl, combine mayonnaise, Dijon mustard, salt, and pepper. Mix well until creamy.
  4. Add shredded chicken, diced celery, halved grapes, and chopped green onions to the bowl with the dressing. Stir until well coated.
  5. Taste the chicken salad and adjust seasoning if needed. Optionally, add chopped nuts for extra texture.
  6. Chill the chicken salad in the refrigerator for at least 30 minutes before serving.
  7. Enjoy on a bed of greens, in a sandwich, or with crackers.

Notes

Swap out grapes for apples or dried cranberries for a different flavor. Store leftovers in an airtight container for up to 3 days.
