  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 can (14.5 oz) diced tomatoes (drained)
  • 1 bell pepper, sliced (red, green, or yellow)
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large baking dish, combine the tomatoes, sliced bell pepper, onion, and garlic. Drizzle with olive oil and season with salt, pepper, and Italian seasoning. Toss to combine.
  3. Place the chicken breasts on top of the vegetable mixture, seasoning them with additional salt, pepper, and Italian herbs if desired.
  4. Cover the dish tightly with aluminum foil and bake for 25-30 minutes or until the chicken is cooked through (internal temperature of 165°F or 74°C).
  5. Remove the foil and bake for an additional 10-15 minutes for a lovely golden finish.
  6. Garnish with fresh herbs before serving for added freshness and flavor.
