Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line your baking sheet with parchment paper.
  3. In a mixing bowl, whisk together flour, cocoa powder, instant espresso powder, baking powder, and salt.
  4. In another bowl, mix granulated sugar, brown sugar, and melted butter until smooth. Add the egg and vanilla, stirring until incorporated.
  5. Fold the dry ingredients into the wet mixture until just combined; the dough should be thick.
  6. Cover and refrigerate the dough for about 15 minutes.
  7. Scoop tablespoon-sized portions, roll into balls, and coat with powdered sugar.
  8. Place on the prepared baking sheet and bake for 10-12 minutes, until set but still soft in the center.
