Ingredients

  • 1 cup crushed graham crackers (or chocolate cookies for a twist)
  • 1/4 cup melted butter
  • 1/2 cup brown sugar
  • 1/4 cup corn syrup
  • 1/2 teaspoon vanilla extract
  • 1 cup chopped pecans
  • 1 cup whipped cream (optional topping)

Instructions

  1. In a bowl, mix crushed graham crackers with melted butter until well combined.
  2. Spoon about 1-2 tablespoons of the graham cracker mixture into the bottom of serving cups, pressing down to form a crust.
  3. In a separate bowl, combine brown sugar, corn syrup, and vanilla extract. Stir in chopped pecans until well coated.
  4. Spoon the pecan filling over the crust in each cup until nearly full.
  5. Pop the cups in the refrigerator for at least 2 hours to set the filling.
  6. Top with whipped cream if desired, and enjoy your no-bake treats!

Notes

Store the cups in an airtight container in the refrigerator for up to 3 days. They freeze well for longer storage.
