Ingredients

  • 1 box yellow cake mix (any brand)
  • 2 cups pecans, chopped (or walnuts for a twist)
  • 1 cup unsalted butter, melted
  • 1 cup light corn syrup
  • 1 cup brown sugar, packed
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • Whipped cream or ice cream (optional, for serving)

Instructions

  1. Prepare Your Cooking Setup: If using a slow cooker, lightly grease the inside of the crockpot. If using an oven, preheat it to 350°F (175°C).
  2. Mix the Liquid Ingredients: In a mixing bowl, whisk together the melted butter, corn syrup, brown sugar, eggs, and vanilla extract until well combined.
  3. Add the Pecans: Stir in the chopped pecans until they are evenly distributed in the mixture.
  4. Layer Ingredients: Pour the mixture into the greased crockpot or spread it evenly in a greased 9×13 inch baking dish.
  5. Add Cake Mix: Sprinkle the dry yellow cake mix on top of the pecan mixture — do not stir!
  6. Bake: For the slow cooker, cook on high for about 2-3 hours, checking for doneness. For the oven, bake for 40-45 minutes or until golden brown and set in the center.
  7. Cool & Serve: Allow to cool slightly before serving. Top with whipped cream or ice cream if desired.
