Ingredients

  • 1 prepared pie crust (store-bought or homemade, thawed if frozen)
  • 2 cups fresh spinach, chopped (or frozen, thawed and drained)
  • 1 cup ricotta cheese
  • 3 large eggs
  • 1/2 cup milk (or any milk variety)
  • 1 cup shredded cheese (mozzarella, cheddar, or feta)
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste

Instructions

  1. If using fresh spinach, rinse and chop it. If using frozen, thaw and drain well.
  2. In a large bowl, combine ricotta cheese, eggs, milk, nutmeg, salt, and pepper. Whisk until smooth.
  3. Fold in the spinach and shredded cheese until evenly distributed.
  4. Place the pie crust in your slow cooker. Pour the filling mixture into the pie crust.
  5. Cover and cook on low for about 3 to 4 hours, until the center is set and lightly golden on top.
  6. Allow the quiche to cool for a few minutes before slicing. Serve warm or at room temperature.

Notes

Store leftover quiche in an airtight container in the fridge for up to 3 days. Reheat in the microwave or oven until heated through.
