Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups Mexican blend cheese, shredded
  • 2 tablespoons fajita seasoning
  • Optional toppings: sour cream, avocado, cilantro, tortilla chips

Instructions

  1. Place the chicken in the bottom of your slow cooker or casserole dish.
  2. Layer the sliced bell pepper and onion on top of the chicken.
  3. In a bowl, combine the black beans, diced tomatoes, and fajita seasoning. Pour this mixture over the chicken and veggies.
  4. For a slow cooker, cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. For an oven, preheat to 375°F (190°C), cover, and bake for 40-45 minutes.
  6. Once cooked, sprinkle the shredded cheese on top and let it melt (about 5 minutes).
  7. Serve with your favorite toppings.
