Ingredients

Scale
  • 1 package sugar-free Jello
  • 1 cup water (boiling)
  • 1 cup cold water
  • Fresh fruit (like strawberries, peaches, or pineapple, chopped)
  • 1 cup whipped cream or Greek yogurt
  • Nuts (optional, like almonds or walnuts)

Instructions

  1. Boil 1 cup of water. Add sugar-free Jello powder to a mixing bowl and pour the boiling water over it, stirring for 2-3 minutes until fully dissolved.
  2. Add 1 cup of cold water to the dissolved gelatin mixture.
  3. Gently fold in chopped fresh fruit.
  4. Fold in 1 cup of whipped cream or yogurt until smooth.
  5. Transfer to a mold or clear glass dish and cover with plastic wrap.
  6. Refrigerate for at least 4 hours or until fully set.
  7. Once set, slice or scoop into bowls and serve.

Notes

Can be made a day in advance. Store in an airtight container in the fridge for up to 3-4 days.
