  • 2 cups grated carrots
  • 1 cup cottage cheese
  • 3 large eggs
  • ½ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg (optional)
  • ½ cup chopped nuts or raisins (optional)

Instructions

  1. Prepare the cooking vessel by greasing the inside lightly if using a slow cooker. For an air fryer, use a baking pan that fits inside.
  2. In a bowl, blend together cottage cheese, eggs, honey (or maple syrup), and vanilla until smooth.
  3. In a separate bowl, whisk together grated carrots, baking soda, cinnamon, and nutmeg (if using) along with any optional add-ins.
  4. Pour the cottage cheese mixture into the carrot mixture and stir until just combined.
  5. Transfer the batter into the prepared slow cooker or air fryer pan.
  6. If using a slow cooker, cover and cook on low for about 3-4 hours. If using an air fryer, cook at 320°F (160°C) for about 25-30 minutes, checking for doneness with a toothpick.
  7. Allow to cool before slicing and serving.

Notes

For a vegan version, swap honey with agave syrup. Adjust spices to taste. Store leftovers in the refrigerator for up to 5 days.
