Instructions

  1. Prepare the yeast: In a small bowl, mix warm milk, sugar, and yeast. Let it sit for 5-10 minutes until foamy.
  2. Make the dough: In a large mixing bowl, combine flour and salt. Make a well in the center; add the foamy yeast mixture, eggs, and melted butter. Mix until a shaggy dough forms.
  3. Knead the dough: Transfer the mixture to a lightly floured surface and knead for about 10 minutes, until smooth and elastic.
  4. Let it rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise for about 1 hour or until doubled in size.
  5. Form the piroshki: Punch down the dough gently, divide into 12-16 equal portions, and fill each with about 1 tablespoon of chosen filling. Pinch the edges to seal.
  6. Second rise: Place shaped piroshki on a lined baking tray, cover, and let rise for another 30 minutes.
