Ingredients

  • 2 cups regular long-grain white rice, uncooked
  • 3 cups chicken broth
  • 1 cup water
  • 1 can (10.5 oz) cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried parsley

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly oil a large baking dish.
  2. Combine the rice, chicken broth, water, and cream of chicken soup in the baking dish. Sprinkle in the garlic powder, onion powder, black pepper, and dried parsley.
  3. Stir until evenly mixed and the soup is distributed.
  4. Arrange the chicken pieces on top of the rice mixture, skin-side up.
  5. Cover the dish tightly with foil and bake for about 90 minutes, or until rice is tender and chicken is cooked through.
  6. Remove the foil, let rest for 5 minutes, then fluff the rice with a fork before serving.

Notes

Cool leftovers to room temperature before storing. Can freeze for up to 2 months.
