  • 2 cups orzo pasta
  • 1 lb chicken breast, shredded
  • 3 large onions, sliced
  • 4 cups chicken broth
  • 2 cups shredded mozzarella cheese
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté for about 15-20 minutes until they turn golden brown and caramelized.
  3. In a separate pot, cook the orzo according to package instructions until al dente. Drain and set aside.
  4. In a large mixing bowl, combine the sautéed onions, cooked orzo, shredded chicken, thyme, salt, and pepper. Pour in the chicken broth and stir until well incorporated.
  5. Transfer the mixture into a greased 9×13-inch casserole dish, spreading it evenly.
  6. Sprinkle the shredded mozzarella cheese generously over the top and bake for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Allow the casserole to rest for 5 minutes before serving.

Notes

For a vegetarian version, substitute chicken with mushrooms and use vegetable broth.
