  • 1.5 lbs Chicken Breasts, skinless and boneless
  • 1 cup Orzo Pasta
  • 2 large Onions, thinly sliced
  • 2 cups Chicken Broth
  • 1 cup Heavy Cream
  • 1.5 cups shredded Gruyere or Swiss Cheese
  • 3 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • 1 teaspoon dried Thyme
  • Salt and Pepper, to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the sliced onions with a pinch of salt and cook for about 20 minutes until caramelized.
  2. Add minced garlic to the onions and stir for 1-2 minutes until fragrant.
  3. Push the onions aside in the skillet and add the chicken breasts; cook for about 5-7 minutes until lightly browned.
  4. Preheat the oven to 375°F (190°C). In a large bowl, combine orzo, chicken broth, heavy cream, sautéed onions and garlic, thyme, and cooked chicken, mixing well.
  5. Pour the mixture into a greased casserole dish. Top with shredded cheese evenly.
  6. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
  7. Let sit for 5 minutes before serving. Garnish with fresh herbs if desired.

Notes

Store leftovers in an airtight container for up to 4 days. Casserole can be assembled ahead of time for convenience.
