  • 2 cups fresh peaches (or canned, drained) – peeled and diced
  • 1/2 cup granulated sugar – adjust to taste
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 1 pre-made pie crust
  • Oil for frying
  • Powdered sugar (optional)

Instructions

  1. In a medium bowl, combine diced peaches, sugar, cinnamon, and lemon juice. Mix until well combined and set aside.
  2. On a floured surface, gently roll out the pie crust to about 1/8 inch thick. Cut into circles (about 4–5 inches in diameter).
  3. Place a tablespoon of peach filling on one half of each circle. Fold the other half over and seal the edges, crimping with a fork for a decorative touch.
  4. In a large pot or deep skillet, heat about 2 inches of oil to 350°F (175°C). You can test the oil with a small piece of dough; it should sizzle upon contact.
  5. Carefully place a few pies in the hot oil, frying for 2-3 minutes on each side or until golden brown. Remove and drain on a paper towel.
  6. If desired, sprinkle with powdered sugar while still warm for an extra touch of sweetness.

Notes

Using seasonal fruits yields the best flavor; you can use gluten-free pie crust if necessary.
