In a medium bowl, combine diced peaches, sugar, cinnamon, and lemon juice. Mix until well combined and set aside.
On a floured surface, gently roll out the pie crust to about 1/8 inch thick. Cut into circles (about 4–5 inches in diameter).
Place a tablespoon of peach filling on one half of each circle. Fold the other half over and seal the edges, crimping with a fork for a decorative touch.
In a large pot or deep skillet, heat about 2 inches of oil to 350°F (175°C). You can test the oil with a small piece of dough; it should sizzle upon contact.
Carefully place a few pies in the hot oil, frying for 2-3 minutes on each side or until golden brown. Remove and drain on a paper towel.
If desired, sprinkle with powdered sugar while still warm for an extra touch of sweetness.
