  • 2 pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Cut the chicken breasts into bite-sized pieces.
  3. Pat the chicken pieces dry with a paper towel.
  4. Season the chicken pieces with salt, pepper, paprika, thyme, and parsley.
  5. Add the olive oil to the hot skillet, swirling it to coat.
  6. Once the oil is hot, add the seasoned chicken pieces in a single layer.
  7. Cook the chicken for about 6-7 minutes, stirring occasionally, until golden brown and cooked through.
  8. Remove the chicken from the skillet and set aside.
  9. Reduce the heat to medium and add the butter to the skillet.
  10. Add the minced garlic to the melted butter and cook for about 1-2 minutes.
  11. Return the cooked chicken to the skillet, tossing to coat.
  12. Sprinkle the grated Parmesan cheese over the chicken and stir to combine.
  13. Cook for another 2-3 minutes, allowing the cheese to melt.
  14. Taste and adjust seasoning as needed.
  15. Serve hot, garnished with additional parsley or Parmesan.

Notes

For best browning, do not overcrowd the skillet. Make sure chicken pieces are evenly sized for uniform cooking.
