Ingredients

  • 1 ½ lbs (680g) chicken breast, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 4 tbsp butter, divided
  • 4 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 12 oz (340g) pasta (penne, fettuccine, or spaghetti)
  • 2 tbsp butter
  • 4 garlic cloves, minced
  • 1 ½ cups (360ml) heavy cream
  • 1 cup (100g) grated Parmesan cheese
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ cup (15g) chopped fresh parsley (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat 2 tbsp olive oil and 2 tbsp of the butter in a large skillet over medium-high heat.
  3. Add the bite-sized chicken pieces and season with paprika, Italian seasoning, salt, and black pepper.
  4. Cook for 5 to 6 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
  5. Add minced garlic and red pepper flakes if using, and cook another 1 to 2 minutes until fragrant.
  6. Remove the chicken from the skillet and set aside.
  7. In the same skillet, melt the remaining butter over medium heat.
  8. Add additional minced garlic and sauté for about 1 minute until aromatic.
  9. Pour in heavy cream and stir to combine. Bring to a gentle simmer.
  10. Gradually add Parmesan cheese, stirring constantly until melted and smooth.
  11. Season the sauce with salt and black pepper to taste.
  12. Add the cooked pasta to the skillet and toss to coat.
  13. Return the cooked chicken bites to the skillet and stir gently to combine.
  14. Garnish with chopped parsley and serve hot.

Notes

Pat the chicken dry before seasoning to encourage browning. Refrigerate leftovers in an airtight container for up to 3 days.
