Ingredients

  • 1 pound chicken breast, cut into bite-sized pieces
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 8 ounces pasta (penne or fettuccine)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta until al dente, reserve some pasta water, then drain.
  2. In a skillet, melt 2 tablespoons of butter over medium heat. Add chicken pieces and cook until golden brown and cooked through, about 5–7 minutes.
  3. Add minced garlic to the skillet and sauté for 1–2 minutes until fragrant.
  4. Reduce heat to low, pour in heavy cream and stir. Add grated Parmesan and mix until melted.
  5. Add cooked pasta to the sauce, mix well, adding reserved pasta water as needed for desired consistency.
  6. Season with salt and pepper, let simmer for 1–2 minutes.
  7. Remove from heat and stir in remaining butter. Serve warm with extra Parmesan if desired.

Notes

Feel free to customize with vegetables or different proteins. This dish stores well in the fridge and can be reheated easily.
