Ingredients

  • 2 lbs chicken breasts – boneless and skinless
  • 8 oz bowtie pasta
  • 1/2 cup unsalted butter
  • 6 cloves garlic – minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper – to taste
  • Fresh parsley – chopped, for garnish
  • Optional veggies – such as spinach or cherry tomatoes

Instructions

  1. Place the chicken breasts in the slow cooker and season with salt and pepper.
  2. In a separate bowl, melt the butter and mix in the minced garlic. Pour this mixture over the chicken.
  3. Pour the chicken broth over the seasoned chicken in the slow cooker.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and cooked through.
  5. About 20 minutes before the chicken is done, cook the bowtie pasta according to package instructions. Drain and set aside.
  6. Once the chicken is cooked, shred it in the slow cooker using two forks. Stir in the heavy cream and cooked pasta. Mix well.
  7. Garnish with freshly chopped parsley before serving.

Notes

Feel free to customize with your favorite vegetables or herbs. Store leftovers in an airtight container for up to 3 days.
