Ingredients

  • Boneless, skinless chicken thighs or breasts, trimmed and patted dry
  • Kosher salt and freshly cracked black pepper, for seasoning
  • All-purpose flour, for dusting (optional)
  • Unsalted butter
  • Extra-virgin olive oil
  • Fresh garlic (4–6 cloves, minced)
  • Yellow onion or shallots, finely diced (optional)
  • Dry pasta (linguine, fettuccine, or penne)
  • Chicken stock or low-sodium broth
  • Heavy cream or half-and-half (optional)
  • Fresh parsley, thyme, or basil, chopped
  • Lemon zest and juice
  • Grated Parmesan or Pecorino Romano
  • Mushrooms (cremini or baby bella, optional)

Instructions

  1. Prepare the pasta and mise en place by chopping the garlic, measuring the butter, and patting the chicken dry.
  2. Cook the pasta in well-salted boiling water until just shy of al dente. Drain and reserve a cup of pasta water.
  3. Season the chicken with kosher salt and freshly cracked black pepper. Heat olive oil in a skillet and sear the chicken until golden, about 4 to 6 minutes per side.
  4. Remove the chicken and let it rest, then slice or cube it.
  5. Build the sauce by melting butter in the skillet, adding onion or shallots, followed by minced garlic.
  6. Deglaze with chicken stock and simmer to concentrate flavors.
  7. Stir in remaining butter and cream for a creamy sauce, if desired.
  8. Combine the pasta and chicken in the skillet, tossing with reserved pasta water to achieve desired sauce consistency.
  9. Stir in Parmesan and herbs, finishing with lemon zest and juice.
  10. Serve immediately, garnished with parsley and extra Parmesan.

Notes

Pat chicken dry for a better sear. Reserve pasta water to adjust sauce consistency.
