Ingredients

  • 2 cups rotini pasta (or pasta of choice)
  • 2 cups cooked chicken, shredded (rotisserie chicken recommended)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, for garnishing (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook rotini pasta in a large pot according to package instructions until al dente. Drain and set aside.
  3. Sauté minced garlic in a tablespoon of olive oil for about 2 minutes. Add shredded chicken, Italian seasoning, salt, and pepper, cooking until warmed through.
  4. Pour in heavy cream and half of the Parmesan cheese, stirring to combine and simmer for 3-5 minutes.
  5. In a mixing bowl, combine cooked pasta with the chicken mixture and half of the mozzarella cheese.
  6. Transfer to a greased 9×13-inch baking dish, sprinkle remaining Parmesan and mozzarella on top, and bake for 20-25 minutes until bubbly and golden.
  7. Garnish with fresh parsley if desired, serve hot, and enjoy!
