Ingredients

  • 4 boneless, skinless chicken thighs
  • 8 oz spaghetti
  • 2 cups heavy cream
  • 1 cup grated parmesan cheese
  • 2 tablespoons Cajun seasoning
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Season the chicken thighs with salt, pepper, and Cajun seasoning.
  2. In the slow cooker, add the seasoned chicken, minced garlic, heavy cream, and half of the parmesan cheese.
  3. Cover and cook on low for 4 hours or high for 2 hours until the chicken is cooked thoroughly.
  4. About 15 minutes before the chicken is done, cook the spaghetti according to package instructions until al dente. Drain and set aside.
  5. Shred the chicken using two forks and stir it back into the sauce. Add the cooked spaghetti, remaining parmesan, and mix until everything is well combined.
  6. Garnish with fresh parsley and serve immediately.

Notes

Feel free to adjust the spice level by increasing or decreasing the Cajun seasoning. Leftovers can be stored in an airtight container for up to 3 days.
