  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sweetened shredded coconut
  • 1 cup pecans, chopped
  • 1/2 cup brown sugar
  • 1/4 cup unsweetened coconut milk

Instructions

  1. Line the bottom and sides of your slow cooker with parchment paper to prevent sticking.
  2. In a large mixing bowl, beat together the cream cheese and granulated sugar until smooth and creamy.
  3. Mix in sour cream, cocoa powder, and vanilla until fully incorporated.
  4. Add the eggs one at a time, mixing gently until just combined.
  5. Pour the cheesecake batter into the prepared slow cooker.
  6. Cover and cook on low for 4 to 5 hours or until the edges are set and the center is slightly jiggly.
  7. In a small saucepan, combine the coconut, pecans, brown sugar, and coconut milk over low heat until warm and bubbly. Spread this topping over the cheesecake once it’s cooled.
