Ingredients

  • 1 cup unsulfured molasses
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 4 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • ½ tsp ground cloves
  • ½ tsp salt
  • Sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy. Beat in the molasses and eggs until well combined.
  3. In another bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing!
  5. Scoop tablespoon-sized balls of dough and roll them in sugar. Place them on a parchment-lined baking sheet, about 2 inches apart.
  6. Bake the cookies for 10-12 minutes, or until the edges are set but the centers are still soft.
  7. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. Microwave for a few seconds to reheat.
