These gluten-free carrot cake cheesecake bars combine a spiced cake batter with a separate vanilla cream cheese mixture. The pattern runs through the bar rather than forming a frosting layer on top. Each slice will look a little different after the mixtures are alternated and swirled.
Keep the carrots coarsely grated
Weigh the prepared carrots and fold them into the cake batter as directed. They bring moisture and texture without needing a separate fruit addition. This version does not include nuts or raisins, so keep those out of the image and ingredient list unless the recipe is deliberately redeveloped.
Mix cheesecake without whipping it
Room-temperature dairy and eggs make a smooth mixture easier to achieve. Stir rather than aerate, and combine the sugar with cornstarch before adding it. The goal is a pourable cheesecake mixture that can sit alongside the carrot batter without large pockets of foam.
Swirl through the whole depth
Alternate the two mixtures in decreasing portions in the middle of the square pan. A skewer then needs to reach the lower batter too, otherwise the visible top swirl will not reflect the inside of the bars. Stop before the mixtures become one uniform color.
Read the tester by component
Cheesecake can mark the tester even when properly baked. What you are checking for is wet carrot cake batter and excessive movement in the middle. Small cracks at the boundaries between cake and cheesecake are possible. Cool the pan fully before judging whether the bars can be cut neatly.
Gluten-free ingredients and allergens
Use the listed flour weights and distinguish individual bread flours from a plain gluten-free blend. Follow each xanthan or psyllium instruction rather than changing binder amounts automatically. Check packaged ingredients and use clean tools and surfaces to limit gluten cross-contact. Other allergens are listed separately; gluten-free does not mean dairy-free or nut-free.
Contains: Egg and milk. Check the flour blend.
For packaged ingredient claims, see FDA gluten-free label guidance.

Gluten-Free Carrot Cake Cheesecake Bars
Ingredients
Method
- Heat a conventional oven to 350°F / 180°C, with the rack just below center. Line a 9-inch square pan with parchment handles.
- Whisk brown sugar, oil, three eggs and vanilla. Combine flour, raising agents, xanthan, salt and spices separately, then stir into the wet mixture. Fold in the coarsely grated carrots.
- For the cheesecake, stir cream cheese and yogurt smooth without whipping. Mix sugar with cornstarch and stir in, then add the egg, yolk and vanilla. Keep the mixture smooth rather than foamy.
- Place about one-third of the carrot batter in the center of the pan and add about one-third of the cheesecake over it. Continue alternating smaller amounts until both are used. Swirl with a skewer reaching through to the bottom, then tap the pan gently to level.
- Bake 40–45 minutes, until the middle has only a slight wobble and a tester carries no raw carrot cake batter. A little cheesecake on the tester is expected. Surface cracks may appear where the mixtures meet.
- Cool completely in the pan. Lift out and cut into twelve bars, serving at room temperature or chilled.
