These gluten-free pumpkin cream cheese muffins have a creamy vanilla centre beneath a buttery pumpkin-seed crumble. Follow the ingredient weights and visual cues below, then use the recipe card for the full method.
A cream cheese centre inside each muffin
These gluten-free pumpkin cream cheese muffins have three parts: a spiced orange batter, a vanilla cream cheese filling and a pumpkin-seed streusel. The filling goes into the raw batter before baking, leaving a small pale dollop visible at the surface.
The recipe makes twelve muffins in a standard twelve-cup pan. The liners are filled generously, so use the stated pan setup rather than dividing the batter among miniature cups. A scoop makes the portions easier to keep consistent.
Prepare the streusel with cold butter
Mix the streusel flour, brown sugar and xanthan gum before rubbing in cubed cold butter. Stop when some fine crumbs and larger clumps remain. Stir in pumpkin seeds at the end so they are distributed throughout the topping.
The seeds add a distinct look and texture. They belong in the streusel rather than being blended into the filling. Avoid pressing the topping into a solid layer; loose clumps create a more varied surface.
Keep the pumpkin batter balanced
Use plain canned pumpkin puree, not pumpkin pie filling. Brown sugar and the cinnamon, ginger, nutmeg and allspice provide sweetness and seasoning in controlled amounts. Neutral oil keeps its own flavour in the background.
Whisk the wet ingredients together before incorporating the gluten-free dry mixture. Check for flour pockets around the bowl. Use a plain blend by weight and omit extra xanthan gum when the blend already contains it.
Pipe into the batter rather than onto it
Mix room-temperature cream cheese with sugar and vanilla until smooth. Put it in a piping bag with a round opening. After filling the liners with pumpkin batter, push the tip into the middle of a muffin.
Squeeze while gradually lifting the bag, then finish with a small dollop at the surface. Divide the filling among all twelve muffins. Simply piping a large cap on top will not create the same cream cheese core.
Bake until the muffins are set
Scatter the streusel over the filled muffins and bake at 375°F / 190°C. Begin checking around twenty-five minutes and allow up to twenty-eight minutes as needed. Look for risen muffins, golden tops and a tester without raw cake batter.
Let the pan rest for five to ten minutes before moving the muffins to a rack. The liners help support them during this stage. Peel a liner back gently when serving so the muffin is not squeezed around the filling.
Can I change the filling?
This recipe uses a simple cream cheese, sugar and vanilla mixture rather than a frosting or a custard. Adding large amounts of liquid or fruit changes how it pipes and bakes. Keep the stated proportions for this version.
The recipe contains eggs and dairy. A dairy-free or egg-free variation needs separate testing. For a pumpkin dessert that is sliced instead of portioned in liners, try our pumpkin cream cheese roll.
Storage and serving
Keep the muffins in a closed container in the refrigerator for three to four days. The streusel will soften as it absorbs moisture from the muffin and surrounding air. Serve warm or at room temperature while keeping the remainder refrigerated.
Check the seeds and all packaged ingredients for gluten-free suitability. Clean equipment and a protected preparation area matter just as much as choosing a gluten-free flour blend.
Gluten-free ingredient checks
Read packaged ingredient labels and protect the preparation area from gluten cross-contact. For an explanation of packaged gluten-free claims in the United States, see the FDA guide to gluten-free food labeling. This recipe is not automatically free from other allergens.
