These gluten-free red velvet cookies combine cocoa-red dough, a baked cream cheese center and a whipped dairy topping. The filling is added before baking, while the frosting goes on after complete cooling. Keep the cream cheese and cream portions in their own bowls so the two components retain their intended textures.
Use gel or paste coloring
The measured coloring is a concentrated gel or paste, not a large quantity of thin liquid dye. Cocoa and a little vinegar are part of the dough as well. The red appearance should not come from adding unmeasured liquid, which would change how the cookie portions handle.
Check the dough before shaping
A suitable plain flour blend should give a dough that can be scooped and rolled without feeling powdery. Highly absorbent one-to-one blends with additional binders can behave differently. Weigh the flour and follow the xanthan note rather than assuming every gluten-free product works identically.
Bake a separate decoration cookie
Reserve a small portion of dough without sugar coating or cream cheese filling and bake it with the batch. Once cold, it supplies the red crumbs for the topping. That keeps the decoration consistent with the recipe instead of adding unrelated cake crumbs or sprinkles.
Cool on the baking trays
The filled cookies are fragile when they first leave the oven. Moving them too early can break their edges even if the centers look baked. Leave them in place until fully cold, then add the whipped topping and decoration crumbs. Refrigerate the finished batch to suit its dairy filling and frosting.
Gluten-free ingredients and allergens
Use the listed flour weights and distinguish individual bread flours from a plain gluten-free blend. Follow each xanthan or psyllium instruction rather than changing binder amounts automatically. Check packaged ingredients and use clean tools and surfaces to limit gluten cross-contact. Other allergens are listed separately; gluten-free does not mean dairy-free or nut-free.
Contains: Egg and milk. Check the food coloring, cocoa and flour blend.

Gluten-Free Red Velvet Cookies
Ingredients
Method
- Heat a conventional oven to 350°F / 180°C and line two trays. Beat softened butter and dough sugar until lighter. Mix in yolks and vanilla, followed by red gel coloring and vinegar.
- Combine flour, cocoa, baking soda, xanthan and salt separately, then mix into the wet ingredients. The dough should be scoopable without being dry or sticky. Use a plain blend suitable for cookies rather than a very high-absorption blend with extra binders.
- Stir the center’s cream cheese and sugar smooth. Mix in warm cream and vanilla to make a loose, spoonable filling. Add 1–2 tsp extra cream only if block cream cheese makes it too stiff.
- Shape twelve 2-tbsp dough portions into balls, coat with sugar and space at least 2 inches apart. Press a well with a 1-tbsp spoon and fill each with about 2–3 tsp cream cheese mixture. Reserve about 2 tbsp dough and bake it as one plain cookie without coating or filling for decoration.
- Bake one tray at a time for 10–11 minutes, until slightly spread and the filling is set. Keep the waiting tray at room temperature. Leave all cookies on their trays until completely cool.
- Whip the frosting cream and powdered sugar to soft peaks. Loosen its cream cheese separately, then fold into the cream with vanilla, whisking briefly if necessary. Pipe onto cold filled cookies. Crumble the plain baked cookie and sprinkle its crumbs over the frosting.
