  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon (optional)

  • 1 cup gluten-free oats (for the topping)
  • 1/2 cup chopped pecans or walnuts (optional, for topping)
  • 1/3 cup maple syrup (for extra sweetness in the topping)

Instructions

  1. Boil sweet potatoes in a large pot for about 15-20 minutes, or until fork-tender. Drain and let cool.
  2. In a large mixing bowl, mash the sweet potatoes until smooth.
  3. Add brown sugar, melted butter, milk, eggs, vanilla, cinnamon, and salt to the bowl; mix well until fully incorporated.
  4. Pour the sweet potato mix into a greased crockpot or slow cooker.
  5. In another bowl, combine oats, nuts (if using), and maple syrup. Sprinkle this mixture evenly over the sweet potato layer.
  6. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until heated through.
  7. Once done, let it cool slightly before serving, allowing the flavors to set.
