  • 5 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • Fresh berries, chocolate drizzle, or whipped cream for garnish

Instructions

  1. Prepare the crust: In a bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined.
  2. Press about a tablespoon of the crust mixture into the bottom of each mini cheesecake mold or jar.
  3. Make the filling: In a separate bowl, beat the cream cheese until smooth, then gradually add in the sugar.
  4. Mix in the vanilla extract and add eggs one at a time, ensuring fully incorporated.
  5. Spoon the cheesecake filling over the crusts, filling each about three-quarters full.
  6. Preheat your air fryer to 300°F (or an oven to 325°F) and bake for 12-15 minutes until edges are set.
  7. Let cool for 15 minutes, then refrigerate for at least 2 hours. Top with desired toppings before serving.
