Ingredients

  • 2 cups rolled oats
  • 1 cup shredded coconut
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1 cup fruit jam (raspberry, apricot, or your preference)
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine rolled oats, shredded coconut, brown sugar, and baking powder.
  3. Add melted butter and vanilla extract, mixing until combined and crumbly.
  4. Line an 8×8-inch baking pan with parchment paper and press half of the oat mixture into the bottom.
  5. Spread fruit jam evenly over the oat base.
  6. Crumble the remaining oat mixture over the jam, pressing gently.
  7. Bake for 25-30 minutes or until golden brown. Let cool before slicing.
