Ingredients

  • 1 cup finely chopped pecans
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups crushed graham crackers

Instructions

  1. In a large bowl, combine the chopped pecans, brown sugar, melted butter, vanilla extract, salt, and crushed graham crackers. Stir until well mixed.
  2. Using your hands, roll the mixture into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
  3. Spray the slow cooker insert with non-stick cooking spray.
  4. Place the pecan balls in the slow cooker, making sure they’re slightly spaced apart.
  5. Cover and cook on low for about 120 minutes, or until the balls are firm and slightly golden.
  6. Allow them to cool slightly before serving. Enjoy warm or at room temperature.

Notes

For a gluten-free version, use almond flour instead of graham crackers. Add a dash of cinnamon or nutmeg for extra flavor.
