Instructions

  1. Lightly grease the insert of your slow cooker or line it with parchment paper.
  2. In a large mixing bowl, combine the flour, sugar, baking soda, cinnamon, nutmeg (if using), and salt.
  3. In another bowl, whisk together the vegetable oil and eggs. Gradually mix this into the dry ingredients until just combined. Avoid overmixing.
  4. Gently fold in the chopped apples and nuts (if using) until evenly distributed.
  5. Transfer the batter to the prepared slow cooker, smoothing the top.
  6. Cover and cook on high for 3 to 4 hours or low for 6 to 7 hours, until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool slightly before slicing. Enjoy it warm or at room temperature!
