Ingredients

  • Cucumbers (2-3 medium)
  • Tomatoes (2-3 medium)
  • Feta Cheese (1 cup, crumbled)
  • Red Onion (1 small, thinly sliced)
  • Extra Virgin Olive Oil (3 tablespoons)
  • Red Wine Vinegar (2 tablespoons)
  • Fresh Oregano (1 teaspoon, dried is fine too)
  • Salt and Pepper (to taste)

Instructions

  1. Prepare the Vegetables: Wash and chop cucumber and tomatoes into bite-sized pieces.
  2. Slice the Onion: Thinly slice red onion; soak in cold water if too pungent.
  3. Combine Ingredients: In a bowl, mix cucumbers, tomatoes, onion, and feta.
  4. Prepare the Dressing: Whisk olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl.
  5. Dress the Salad: Pour dressing over salad and toss gently.
  6. Chill and Serve: Let chill in the fridge for at least 10 minutes before serving.
  7. Garnish and Enjoy: Add extra feta on top before serving.

Notes
