  • 2 pounds boneless, skinless chicken breasts
  • 1 can (4 oz) diced green chiles
  • 1 bell pepper, chopped
  • 1 cup corn (fresh, canned, or frozen)
  • 1/2 cup red onion, diced
  • 1 cup Greek yogurt (or sour cream)
  • 1 tbsp lime juice
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt, pepper, and cumin.
  2. Place the seasoned chicken breasts in a slow cooker with the can of diced green chiles. Cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
  3. Once cooked, remove the chicken from the slow cooker and shred it using two forks.
  4. In a large bowl, mix the shredded chicken, chopped bell pepper, corn, red onion, Greek yogurt (or sour cream), and lime juice.
  5. Stir everything together until evenly combined and taste to adjust seasoning with salt and pepper.
  6. Let the salad sit in the fridge for at least 30 minutes to allow the flavors to meld.
  7. Enjoy it on its own, in a wrap, or on a bed of greens!

Notes

This salad is great for meal prep; make a big batch for lunches throughout the week. Adjust the amount of green chiles for your desired spice level.
