  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon green food coloring
  • Red and white sprinkles or M&M’s for decoration

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy (about 2-3 minutes).
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  5. Stir in the green food coloring until uniformly distributed.
  6. Use a cookie scoop or spoon to drop rounded tablespoons of dough onto a lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are set. They will continue to firm up as they cool.
  8. Once cooled, adorn your Grinch Cookies with sprinkles or M&M’s.

Notes

Store cookies in an airtight container at room temperature for up to a week. For a dairy-free version, replace butter with coconut oil.
