  • 1 lb ground beef (lean or extra-lean)
  • 3 medium zucchinis, sliced
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Cooking spray or olive oil (for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a baking dish with cooking spray or olive oil.
  3. In a skillet, over medium heat, brown the ground beef, breaking it apart with a spatula. Add the diced onions and minced garlic, cooking until the beef is no longer pink and the onions are translucent. Drain excess fat if necessary.
  4. Stir in the Italian seasoning, salt, and black pepper into the beef mixture.
  5. In the prepared baking dish, spread half of the sliced zucchini at the bottom. Top with half of the ground beef mixture. Repeat this process, finishing with a layer of zucchini.
  6. Sprinkle the shredded cheese on top of the final layer of zucchini.
  7. Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbling and golden.

Notes

You can customize with different vegetables or cheese. This dish can be made ahead of time and stored in the refrigerator.
