Ingredients

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 bell pepper, diced
  • 1 carrot, shredded
  • ½ cup green onions, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar or lime juice
  • Romaine or iceberg lettuce leaves

Instructions

  1. Gather all your ingredients and wash the lettuce leaves gently. Set them aside to dry.
  2. In a large skillet, heat the olive oil over medium heat until shimmering.
  3. Add the minced garlic and ginger to the skillet and sauté for about 1-2 minutes until fragrant.
  4. Add the ground turkey, breaking it up with a wooden spoon, and cook for about 5-7 minutes until browned.
  5. Stir in the diced bell pepper and shredded carrot, cooking for another 3-4 minutes until tender.
  6. Pour in the soy sauce and rice vinegar, mix well, and simmer for another 2-3 minutes.
  7. Remove from heat and serve the turkey filling in a bowl alongside the lettuce leaves for assembly.

Notes

Feel free to swap ground turkey for ground chicken or tofu for a vegetarian version. Add red pepper flakes for extra heat if desired.
