Ingredients

  • 1 cup Guinness beer
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream (for frosting)
  • 1/2 cup powdered sugar (for frosting)
  • 1 cup Irish cream liqueur (for frosting)
  • 1/2 cup unsalted butter, softened (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a cake pan.
  2. In a large bowl, whisk together the Guinness beer and melted butter. Stir in the granulated sugar, eggs, and sour cream until well combined.
  3. In another bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt. Slowly mix into the wet ingredients until just combined, being careful not to overmix.
  4. Pour the batter into the prepared pan and bake for 30-35 minutes, checking for doneness with a toothpick.
  5. Allow the cake to cool completely in the pan for 10 minutes, then transfer to a wire rack.
  6. For frosting, beat the softened butter until creamy, gradually adding powdered sugar until fluffy. Mix in the Irish cream and heavy cream until smooth.
  7. Once the cake is fully cooled, frost it generously with the Irish buttercream, slice, and serve.

Notes

Make sure all ingredients are at room temperature for best results. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
